  1. You guys are toast.

New Favorite "I wouldn't think about that" combo:

In a well-lubed 9X13 comine a diced sweet potato (or butternut squash for fewer cals), a chopped red onion, and a large head of fresh broccoli (just the florets). I also threw in some mushrooms.

Add a bit of olive oil and garlic. I've also added rosemary once and cilantro another time - can't really go wrong. Sometime I leave out the olive oil and just spray the veggies directly to avoid the OO cals. Most people probably think thats gross. Do what you want.

Bake at 350 for about 30-40 minutes or until sweet potato is cooked as desired.

The result is interesting, delicious, and packed with fiber. I split it up into 3 servings. Depending on the size of your sweet potato and the generosity of your olive oil portioning, one serving will probably run you between 150-200 dense cals.

    YUMM-O
